In one day, at one venue, we ran three completely different catering concepts simultaneously:
- 4,980 guests — dome catering

Why three concepts at once is harder than one big buffet
Feeding ten thousand people is a logistics problem. Feeding ten thousand people three different ways, at the same venue, on the same timeline, is a different problem entirely.
Each concept runs on its own clock. Dome catering is individually plated and covered, so it has to be assembled in sequence and reach the table at temperature. A western plated dinner is a synchronised service — 1,350 covers need to land together, or the room notices. Stall service is continuous rather than timed, which means holding quality across hours instead of minutes.
Run those three side by side and every shared resource becomes a constraint: kitchen space, holding equipment, service crew, trolley routes, even the doors your team walks through. Two concepts competing for the same corridor at the same minute is how large events fall behind.
How we approached it
The work happens before the event, not during it.
Separate production lines. Each concept was treated as its own operation with its own prep schedule and its own crew, rather than one kitchen trying to switch between three outputs.
Staggered timing. The three services were sequenced so peak demand never landed on the same resource simultaneously.
Defined service routes. Crews for each concept moved on planned paths through the venue, which keeps 4,000 stall guests from colliding with a plated service in progress.
One accountable structure. At this scale, the difference between a smooth event and a late one is usually not the food. It is whether someone owns the timeline and can make a call in the moment.
